2017 Dolcetto

Average Age of Vines: Vineyard 28 Site – 6 years and Wildwater Site – 2 years
Yield per Hectare: 3.9mt/Ha
Harvest Date: 20th March and 4th April 2017
Winemaking: Fruit was crushed, de-stemmed and cooled to 10 degrees C for 24 hours.
After cold soaking the juice was warmed to 16 degrees C and innoculated with yeast.
The skins were plunged every 6 hours until Baume 8 was reached where upon the wine was pressed from the skins. Fermentation then continued in stainless steel tank until the desired Baume was reached.
The wine was cooled and sterile filtered to stop fermentation.
It was then bottled in June 2017.
History: Dolcetto is a black Italian grape variety widely grown in the Piedmonte Region, Italy. In Italian – Dolcetto – means “little sweet one”. In Italy Docletto is used to make a light easy drinking wine that pairs well with pasta and pizza dishes. It can often be tannic and fruity with moderate to low levels of acidity. Similar to Brown Brothers – Vineyard 28 has opted to make a distinctive fruit driven wine, that can be served chilled.
Food Pairing: Great with BBQ meats over summer. Or splash over some summer fruits with ice cream for dessert.
Cellaring: A wine to enjoyed now whilst young & fresh. Drink now.
