Winemaking:Cold ferment separately using stainless steel. Blended to achieve optimum balance and flavours whilst still maintaining predominantly a Sauvignon Blanc Character. Pale straw in colour, with fresh apple to lime notes and herbaceous overtones.

This is a clean crisp wine.

Food Pairing:Grilled fish or chicken, a simple Caesar salad.
Cellaring:Can be enjoyed now and for up to 3 years.
History:Here in Australia we are known for bringing the two together in a blend, commonly referred to as the “Classic White” wine blend. Sauvignon Blanc is a green skin grape, and it is believed to take its name from two French words – Sauvage – meaning “wild” and Blanc meaning “white”.
Less is known about Semillon, a golden skinned grape with it first being introduced into Australia in the early 19th Century, where it became synonymous with the Hunter Wine Region.
