| Vineyard Notes: | Region: Geographe, Western Australia Harvest Date: Semillon: Sauvignon Blanc – 15th February 2025 / Semillon – 13th February 2025 ABV: 12.5% – 7.4 std drinks Vineyard: King Lake & Wildwater In Western Australia we are known for bringing the two grapes together in a blend, commonly referred to as SBS or SSB depending upon the composition of the blend, and which variety is the dominant. Sauvignon Blanc is a green skin grape and it is believed to take its name from two French words – Sauvage – meaning “wild” and Blanc meaning “white”. Less is known about Semillon, a golden skinned grape with it first being introduced into Australia in the early 19th Century, where it became synonymous with the Hunter Wine Region. |
| Winemaking: | 70% Sauvignon Blanc 30% Semillon Made as individual parcels in stainless steel. Cold fermented to maintain varietal characteristics. Semillon is blended with the Sauvignon Blanc to increase mouthfeel and length on the palate, whilst maintaining traditional SB traits. |
