Winemaking: | Immediately on harvesting the grapes were pressed and the juice chilled to 12 degrees C. It was then allowed to settle for 2 days, before the juice was racked and warmed to 16 degrees C. A wild yeast was added and the ferment commenced. Fermentation was controlled at temperatures between 13-16 degrees C. Towards the end of fermentation the wine was transferred to used French Oak barrels to complete this process. Lees stirring commenced at the end of fermentation and was carried out weekly for 2 months. The wine was then prepared and bottled in June 2022. | ||||
History: | Fiano is a white grape variety originating from the coastal regions of Southern Italy. The traditional name for this variety is vitis apiana which translates to “the vine beloved by bees. There are often many bees drawn to the sweetness of the Fiano grape. This variety was almost forgotten but was rediscovered by Italian producers and then consumers in the 1990s and went through its own renaissance. Fiano is traditionally known for being a fuller-bodied white wine with strong flavours, subtle nutty aromas. | ||||
