Harvest Date:18th and 24th Febuary 2020
Winemaking:The fruit was destemmed, cooled to approx 16 degrees C and a wild yeast was added. Prior to completion of the ferment, Malolactic ferment began. When the wine had fermented to dryness, skin contact was maintained for a further 7 days. The wine was pressed off skins and transferred to a stainless steel tank and allowed to settle for 36 hours before transfer to oak barrel. The wine was aged in a mixture of new and older French oak barriques for 12 months.
HistoryCabernet Sauvignon is one of the world’s most recognised grape varieties, grown in nearly every major grape growing country. It came to prominence in France in the Bordeaux region where is usually blended with Merlot or Cabernet Franc. Despite this prominence, the grape is a relatively new variety, the product of a chance crossing between Cabernet Franc and Sauvignon Blanc during the 17th century in south western France.
