Cabernet Sauvignon is one of the world’s most recognised grape varieties, grown in nearly every major grape growing country. It came to prominence in France in the Bordeaux region where it is usually blended with Merlot or Cabernet Franc.

Our oldest block of vines on Vineyard 28, planted in 1998 and 1999, growing in the tuart sands. Trellised using vertical shoot positioning and spur pruned, with shoot selection undertaken each spring.

Handpicked and destemmed. 5% of fruit is added as whole bunch to the ferment. Wild yeast ferment, below 28 degrees. Wine is left on skins for s further 7 days after completion of ferment prior to pressing. 12 months on oak, 25% new French, balance 3-5 year old oak.
